Cooking the Pancakes

  1. Preheat a large frying pan or griddle to low-medium heat.

  2. Place the first 4 ingredients in a blender and pulse until smooth.

  3. Lightly grease the frying pan/griddle with non-stick cooking spray or oil.

  4. Add blueberries to batter.

  5. Pour about 3 tablespoons of batter onto the griddle.

  6. Fry until you see a few air bubbles on top of the uncooked side.

  7. Flip, and continue to cook for 1-3 minutes on the second side.

  8. Repeat with the rest of the batter.
