Sparkling Cranberry Kombucha Mocktail

Ingredients

  • 2 bottles Kombucha of choice (such as ginger or cranberry flavored)
  • ½ cup 100% Cranberry juice
  • 1 slice fresh ginger, thinly sliced, plus more for garnish
  • 1 large sprig of fresh rosemary, plus more for garnish
  • Fresh cranberries, rosemary sprigs, and thinly sliced ginger for garnish

Instructions

  1. Fill 4 glasses with ice and set aside
  2. In a pitcher or quart-sized mason jar, muddle sliced ginger and rosemary together with a wooden spoon’s end.
  3. Add cranberry juice and kombucha.
  4. Pour into ice-filled glasses and garnish with sprigs of rosemary, a slice of fresh ginger, and a few cranberries before serving

Cinnamon Roasted Butternut Squash

Ingredients

  • 1 lg butternut squash (about 3 lbs, peeled, seeded and cut into 1 inch cubes)
  • 1 ½ Tbsp extra virgin olive oil
  • 1 ½ Tbsp pure maple syrup
  • 1 ¾ tsp kosher salt
  • ¾ tsp ground cinnamon
  • ½ tsp ground black pepper
  • 1 Tbsp chopped fresh rosemary

Instructions

  1. Position racks in the upper and lower thirds of your oven and preheat oven to 400 degrees F. Generously coat two baking sheets with nonstick spray.
  2. Place the squash cubes in a large bowl. Drizzle with olive oil and maple syrup, then sprinkle the salt, cinnamon, and pepper over the top. Toss to coat, then divide between the two baking sheets, discarding any excess liquid that collects at the bottom of the bowl. Spread the cubes in a single layer on the prepared baking sheets, ensuring they do not overlap.
  3. Place the pans in your oven’s upper and lower thirds and bake for 15 minutes. Remove the pans from the oven, turn the cubes with the spatula, then return to the oven, switching the pans’ positions on the upper and lower racks. Continue baking until the squash is tender, about 10 to 15 additional minutes. Remove from the oven and sprinkle the rosemary over the top. Serve warm

Chocolate Cuties

Ingredients

  • ¼ c. melted semisweet chocolate chips
  • 1 tsp coconut oil
  • 5 mandarin oranges, peeled and divided into segments
  • Flaky sea salt, for garnish

Instructions

  1. Stir together melted chocolate and coconut oil
  2. Dip each clementine segment into melted chocolate and transfer to a parchment-lined baking sheet.
  3. Garnish with flaky sea salt
  4. Refrigerate until firm, 20 minutes
  5. Serve
